Hallo Ihr Lieben, ab und zu möchten man gerne einen Hefeteig machen, doch es fehlt einem die Zeit. Und ich hatte die Tage bei Rina ein Blechkuchen Rezept mit einem veganen Quark-Öl Teig gesehen. Ich habe das Rezept gestern nach gebacken und Pflaumen und Äpfel genommen und zum Schluß noch mit warmer Aprikosenmarmelade glasiert. Das original Rezept findet Ihr auf dem Blog von Rina. Hello Lovlies, if you are afraid of making yeast dough or if you don’t have the time, a dough made of quark and oil is an easy and fast alternative. This quark oil dough doesn’t need any time to rise as a yeast dough does. Taste and structure are very similar. It can be used for sweet and savoury dishes, especially for tartes and quiches. While browsing Rina´s blog, I came across these awesome recipe. I used half plums and half apples for this recipe.
325 gr spelt flour
75 gr brown sugar
3 tsp baking powder
1 Pinch of salt
125 gr vegan quark (I used this one)
100 ml plantbased milk ( I used this one)
100 ml vegetable Oil (I used this one)
a bit of vanilla to taste
Topping
1,5 kg Plums ( Pit the plums and cut each half into thin wedgesI
2 tbsp sugar
1/2 tsp cinnamon
Preaheat oven to 180°C
Add all ingredients in a large bowl and mix until everything is well combined.This is all done very easily and fast. Grease and line the baking try tray with parchment paper. Spread the dough into it. I just used my hands to press the dough onto the bottom of the pan. Then layer your plum wedges onto the dough. Mix your 2 tbsp sugar and 1/2 tsp cinnamon and drizzle over the plums.
Bake the cake in the oven at 180°C for 30-40 minutes. (Let cool slightly and then glazing with some warmed apricot jam)
